It's hard to believe there is any real estate left on Randolph street, but the places keep coming. West Loop Salumi, the first USDA-certified salumeria in Chicago opened for wholesale and online business on Thursday with the retail side to open in mid-July. Greg Laketek trained under Italian Salumi master Massimo Spigaroli and partnered with Jesse Katzman(Avec, Publican) to open this old world salumi shop. Read More...
