Boka and Bristol Groups Reveal Many Details on the Meaty Armour & Swift

Armour & Swift, the highly-anticipated massive forthcoming meaty restaurant from the Boka Group and B. Hospitality (Bristol, Formento's) in the Google Building (1000 W. Fulton), is about three months from opening. Construction is underway (check out the sneak peek photo above) and the restaurant is revealing many more details on the project today before its slated September opening. B. Hospitality chef Chris Pandel will helm the food program at Armour & Swift, and is revealing a few dishes. Expect French-Polynesian spiced bay scallops with coconut and chiles, English pea pierogies with farmers cheese and lemon, crab and potato croquette with basil aioli, and lobster ala Nage with Champagne and fennel to be on the menu. Also look for lots of cuts of "boutique beef," ranging from a 14-ounce bone-in filet to a 36-ounce porterhouse, as well as A5 wagyu. Pandel's takes on steakhouse add-ons, such as roasted porcini and marrow bordelaise, will be available; sides will include wood-roasted broccoli with "corned beef spices."  Read More...
