You can add Lettuce Entertain You Enterprises to the list of restaurant operators drawn to the West Loop. Lettuce will open its third location of Beatrix, the restaurant-cum-coffee-bar named for chairman Rich Melman's mother, in the heart of the Fulton Market district in spring. The restaurant (834 W. Fulton Market) represents Lettuce's first foray into the city's hottest restaurant neighborhood, and if history is any indication (Lettuce has a habit of creating clusters of its concepts), it won't be the last.
