Uncooked - an all-vegan and zero waste restaurant—opened its doors in Chicago’s Fulton Market District on July 6, 2020. The Black-owned, woman-owned, and family-owned restaurant was founded by Jeremy Jones, Kaitlyn Jones, and Carole Jones. Carole is the former chef and cofounder of Chicago Raw, a raw plant-based establishment in Chicago. Uncooked is a grab-and-go restaurant offering raw foods that are 100% plant-based, gluten-free, and sustainably sourced using only whole food ingredients and zero refined sugars or agave.
